Boone Center Chefs Win Wild Game Cook-off

LEXINGTON, Ky. (Feb. 14, 2012) — Seth Russell, executive chef at the University of Kentucky's Hilary J. Boone Center, headed the winning team at Cardinal Hill Rehabilitation Hospital's Annual Wild Game Cook-off fundraiser on Jan. 27 at the Crowne Plaza Campbell House in Lexington.

Russell, along with Boone Center teammates, chefs Jarrod Adams and Rick Hait, won the People's Choice First Place Award. The "wild" game items (actually farm-raised meat) were donated, and each chef was randomly assigned a meat around which to prepare a signature dish.

Russell's dish of fried rabbit waffles with caramelized bacon, quail egg and bourbon maple syrup was chosen as the best in show.
