UK Dining Features Vegetarian Options During October - Vegetarian Awareness Month

LEXINGTON, Ky. (Oct. 8, 2015) — Throughout the month of October, UK Dining will be featuring vegetarian options at University of Kentucky dining locations to recognize Vegetarian Awareness Month.

"UK Dining takes pride in having vegan or vegetarian options available in most of our restaurants," said Lauren McKnight-Ford, UK Dining registered dietitian nutritionist. "In addition to everyday foods that are vegetarian such as eggs, peanut butter, cereal and oatmeal, we offer vegetarian or vegan entrees daily."

The Fresh Food Company, located in The 90, and Blazer Cafe have vegan stations featuring core dishes derived from peas, beans and lentils. The UK community can enjoy a rotating menu of daily features such as vegan jambalaya, Indian spiced tofu sauté and roasted vegetable tacos.

K-Lair, located in Haggin Hall, serves a house-made quinoa burger topped with a fried egg, avocado and pickled onions as well as a house-made spicy black bean burger with lettuce, tomato and chipotle mayo.

Intermezzo, located inside the Patterson Office Tower, features an apple and walnut salad topped with feta. They also serve black bean burgers.

Vegetarian entrees can also be found at Common Grounds, Panda Express, Apothecary, Ag Deli and Bluegrass Cafe.

"Vegetarian options in restaurants and groceries are becoming more popular due to the growing interest in healthy food and concern related to obesity," said McKnight-Ford. "Vegetarian options are consistent with the USDA 2010 Dietary Guidelines for Americans emphasizing the importance of fruits, vegetables, and whole grains as the core of a healthy diet."
