Markey Partners with Local Chefs to Host Summer Cooking Demonstrations

LEXINGTON, Ky. (June 1, 2012) — The University of Kentucky Markey Cancer Center and several local chefs will collaborate this summer to offer free cooking demonstrations to cancer patients, survivors and caregivers looking to bring culinary sophistication and a healthier diet to the table.

Organized by Markey's registered dietitian Karina Christopher, these demonstrations will cover a variety of topics concerning nutrition for cancer patients and survivors.

The current roster of cooking demonstrations includes:

  • Grilling techniques, featuring UK chefs Pete Combs and Chris Roth. This demonstration will take place June 6, 9:30-10:30 a.m. outside of the Combs Research Building at the UK Markey Cancer Center. Guests will be given enticing recipes and learn handy grilling methods to help make the tastiest and most nutritional use of locally found Kentucky Proud foods. Featured foods will include beets, kohlrabi, ginger, string beans, tilapia, goat cheese and arugula.
  • Increasing calorie consumption, featuring chef and registered dietitian Cynthia Chandler from Sullivan University. This session will be held July 30, 4-5:30 p.m. at the Combs Research Building at the UK Markey Cancer Center. Chef Chandler will place emphasis on how to increase calorie consumption in order to get the most food energy out of your diet. Cooking techniques and recipes will feature simple ways to booster the food energy in smoothies, shakes and high-calorie soups.
  • Cooking homegrown fruits and vegetables, featuring Benita McCoy-Lyons of Real McCoy Catering. Real McCoy Catering is partnering with Markey for two special cooking demonstrations on June 16 and Aug. 19 from 10 a.m. — noon. Sessions will be held at Rushing Wind Farm, off Iron Works Pike at 3337 Rushing Wind Lane.

"I'm thrilled to be able to host these sessions," said Christopher. "The cooking demonstrations are a great way to further education for cancer patients, survivors and caregivers on creating healthy, healing meals.”
